How we prepare our products

Meloinon products stand out because they are made with love and respect for nature and man, for this reason all our products are pure, without burdening human health and the environment.

What has made Meloinon's work unique for many years is the continuous care of the raw material. We pay great attention, as we know very well that the quality of the final product is related to the way the raw material (olive fruit, grape) is processed.

Driven by the need and demand to control the quality of the products, we have our own fields and vineyards, we process the raw materials ourselves and we produce the final product.

The philosophy of the Konchylakis family does not stop only at an aromatic, pure and tasty product, but we also invest in the identity of the product. The product that the consumer will buy must be certified and tested. Our family is actively involved in the production of pure and fresh products.
 Bee Products

There are several methods for removing the combs. The beekeeper may simply sweep the bees off the combs and guide them back into the hive. Alternately, the beekeeper injects a puff of smoke into the hive. The bees, sensing the presence of fire, gorge themselves on honey in an attempt to take as much as they can with them before fleeing.

The honeycombs are inserted into an extractor, a large drum that employs centrifugal force to draw out the honey. Because the full combs can weigh as much as 5 lb (2.27 kg), the extractor is started at a slow speed to prevent the combs from breaking.

At the commercial distributor, the honey is poured into tanks and heated to 120°F (48.9°C) to melt out the crystals. Then it is held at that temperature for 24 hours. Any extraneous bee parts or pollen rise to the top and are skimmed off.
The honey is then pumped into jars or cans for shipment to retail and industrial customers.

Olive products

Harvesting is one of the most delicate and decisive steps to obtain excellent quality olive oil. Generally, it is facilitated with the use of nets lying on the ground under the plants that allow easily collection of the fallen product or facilitated by any mechanical equipment.

Olive oil is bottled in fine, elegant, and fully recyclable containers which are customer-oriented in terms of information that focuses on the protection of the product. After harvesting the olives are weighed and subjected to an abundant washing in water.

This process is carried out with a special washing machine with a constant flow of water that invests the olives. The crushing system of the milled olives is the most ancient instrument, conceptually derived from the millstones used since the Hellenic age. Today, however, many mills use the most modern hammer crushers, which break the olives by pushing them violently against a metal grid.

Grape products

The grapes are picked when they are ripe, usually as determined by taste and sugar readings. Then removes the stems from the grape bunches, and crush the grapes (but do not press them) so that they are exposed to the yeast for fermenting, and so the skins can better impart color to the wine.

This is how long the must (juice and grape solids) is allowed to sit, picking up flavor, color and tannin. Too long and the wine is bitter, to short, and it is thin.

Skin and other solids float to the top and need to be pushed back down to stay in contact with the must. This “cap” can be punched down with a tool, or you can pump must from the bottom over the cap and submerge it that way.

A variety of tastes

With the precious goods of our fields at meloinon we produce our products ourselves, just like the previous generations in Crete did.We cultivate and tend our land, our olives and vines, and our bees with care, patience and dedication, without using pesticides, hormones and chemical fertilizers.
